The skirt steak, or arrachera, is a long strip of meat that comes off the inside of the ribs. Flank steak is a similar thin strip, but it is on the outside of the animal's ribs. The longer it marinates, the more robust the flavor will be.
The 3 Calhoun Sisters' Ranch Angus cattle were born and raised on pastures in Livermore, California, carrying on their rural farming heritage for five generations. The family has been farming in the Livermore Valley since the 1850's, and ranching on Mines Road in the Livermore hills since the 1920's.
The livestock are treated humanely, grass fed, pasture raised with no synthetic hormones and are antibiotic free. They work hard to implement regenerative agricultural land management practices, focusing on a well-managed grazing system that can regenerate grassland, build soil, sequester carbon, protect local watersheds and natural resources. The cattle are food shed sourced—born, raised, processed, sold and distributed locally, supporting local businesses and maximizing the direct relationship between the 3 Calhoun Sisters' Ranch and the consumer.
